buy one thing of mountain house eggs and bacon or eggs with peppers, the kind that says "NO COOKING REQUIRED" ( like this http://www.rei.com/product/510120)

buy one package of idahoan baby reds mashed potatoes at the grocery store.

split both packages in half and put half of each in a small ziploc freezer bag - two breakfasts...

in camp add a cup and a half of boiling water in the morning, seal the bag, hide it in a toque or sweater or cozy and wait 5 to 10 minutes.. eat.

When I alternate those with oatmeal, granola, and maybe bagels with peanut butter I don't go any more insane than I already am.
