Seriously, I love flax seed. "Uncle Sam Cereal" was one of my favorites when I was growing up. But the answer lies in your normal serving size and how many servings you think you'll consume.
I still tend to carry more food than I consume. I've gotten better at carrying lighter food, and even fewer servings, since I found the great tips and advice here, but I still carry food back with me every time and usually enough for at least a couple days if I needed to stretch it.
I'm not recommending that you do that too. I'm just saying that this is a difficult question to answer because it's really a personal preference. Some people tend to eat more when they're backpacking. I've found I actually eat less for the first few days and I seldom stay out longer than a few days.
As a rule, I bring normal portions for each meal and toss in a little extra in case I decide I need to stay a little longer.
And, I bring spare food with me in case I run across someone who needs it. This has actually happened to me several times. The first time it happened I had to cut my trip short because I ran into three young men who were famished after being out in a wilderness area for three days. I only brought enough for lunch, dinner, and breakfast. They were literally begging me for food and I could tell they were thinking about how good I might taste if they put me on a spit over a hot fire if I said no. It was actually a lot of fun to share the food and listen to their story. And they were truly thankful I shared what I had.
I'm not sure flax seed would have kept me off that spit though, so now I always toss in a few extra granola bars, just in case
