Hard grating cheeses like Parmesan or Grano Padano carry easily in your pack in a nice hunk, with a tiny grater. Mozzerella is best eaten fresh, like within a day or so of it's being made. Fresh mozz' is one of life's luxuries IMO <img src="/forums/images/graemlins/ooo.gif" alt="" /> Once you've eaten it fresh, you'll easily recognize when a resturant tries to pass off 'pizza cheese' on your entree as 'fresh mozzerella <img src="/forums/images/graemlins/wink.gif" alt="" /> Iz luvs me cheese <img src="/forums/images/graemlins/grin.gif" alt="" />
