Maybe this is old news, but I just discovered "Bacon Pieces" at Winco, under their own brand name. Not bacon bits, though they have those too, similarly packaged. These are larger pieces, suitable for snacking or including in a recipe. Sold in a 2.5oz ziploc-type bag with an oxygen absorber in it for $1.88. Looks like they'll keep a while. The bag I bought the other day says "Purchase by Oct. 27, 2018." Of course, once opened, they wouldn't last that long, but likely plenty long enough for most trips.

I've often taken cooked bacon, and it keeps pretty well, too. I usually augment my morning oatmeal with one slice. The bag is pretty convenient, though.

Winco also has pilot bread in bulk, which I hadn't tried before.
