Kekawaka's Spicy Polenta Cakes with Veggies & Cheese

1/3 cup (54g.) CORA, Instant Polenta
2 rounded Tbs. (7g.) JUST TOMATOES, Some Like It Hot Veggie Mix
2 Tbs. (13g.) freshly grated Parmesan cheese
1 tsp Butter Buds Sprinkles
1/8 tsp FRONTIER, Garlic Granules
1/8 tsp sea salt

1 Tbs olive oil
1 cup water

1) Cut a circle of baking parchment just the inside diameter of your drinking cup. Include the circle in the package with the dry mix.

2) Mix dry polenta, Just Veggies, cheese, Butter Buds, garlic and sea salt. Package in cooking pouch. (My paper cooking pouches work great, and I still have extras.)

1) Line the bottom of your drinking cup with the parchment circle. Drizzle a few drops of olive oil onto the inside of the cup and smear it around to coat the sides. Set aside. Put the rest of the olive oil into the cooking pouch with the dry mix. Pour boiling water into the pouch all at once and mix quickly. Wrap in cozy for 10 minutes.

2) After the 10 minutes is up, stir the polenta to redistribute the vegetables, and scoop the mixture into the prepared cup. Cool as much as possible. You might set the cup in cold water for 5 or 10 minutes to speed the cooling process, but it doesn't have to get really cold. When the mixture has firmed up, run a knife around the sides, and flip upside down; tap to remove cake. Peel off parchment; slice horizontally with a lightly oiled knife into three or four rounds,and serve.

For a real taste treat, brush more olive oil on outside of cooled cakes and grill over hot coals.

These work well as finger food, or as an entre base with a creamy dish ladled over the top like gravy.
