For trips of a couple of weeks or less, I prefer to go without a stove, assuming resupply isn't a problem. I.e., eating cold dinners means for me that it's helpful (not essential but helpful) to have a bigger selection of food options for resupply. It's just easier without a stove, and for a week or two I don't get bored with my food or feel deprived or anything.

I think this is very much a matter of expectations, what you're used to.
