This is one of my favorite breakfasts while I'm camping or backpacking...


You will need:
1/2 Lb. Jimmy Dean Sausage (NOT the sausage links, the ground stuff. I like maple)
4-5 yukon gold potatos (sliced into quarters)
1 egg (beaten)
about 1/2 tbsp oil

Place sliced potatos into hot skillet with oil and let them start to brown and get soft. Add salt/pepper to taste. When potatos start to get soft, crumble sausage into skillet and mix in with potatos. When potatos are browned and sausage is cooked throughout, pour beaten egg over the top of the potatos and sausage. It should only take about 1-2 min for egg to cook. Slide concoction out of the skillet onto a plate, use a fork and enjoy.

I like this breakfast because it gives you your carbohydrates, protein, and fats to get you up and going for a long day of hiking, fishing, kayaking, or whatever. Serve with a cup of pine needle tea.
