Backpacker published a recipe for Maple Bacon Grits in the April issue. I had to try it, since I am off next month on a 9 day trip and oatmeal gets very very old. Anyway, holy smokes it was incredible.

2 cups water
1/2 cup grits
1/2 cup powdered milk (use NIDO ** )
1/2 cup maple syrup
pinch of salt
Add dry ingredients to boiling water, reduce heat
cook for 5 minutes, when it's the consistency of oatmeal (there's that word again)
add bacon, I now use Oscar Meyer REAL bacon bits in the 3 oz packet. approx $ 1.50 at Wal-Mart

Stir in the bacon and enjoy.

PS ( ** -- NIDO is dry whole milk. Since it is whole milk it is far, far better tasting than powdered skim milk. I buy my Nestle NIDO at the WalMart Super Center...it's stocked in the Mexican foods aisle....comes in a 14oz can with a yellow and red label.)
