I have purchased powdered butter from Hosier Farms. I like it, but I don't think it has as much fat as regular butter. It seems more like a powderized cream. I bought it as a fat replacement for baking mixes so I found it a bit frustrating. I guess I should just figure out how much the original recipe called for and figure out how much powder I need to add to get that amount of fat.

The biggest problem with fats and oils in shelf-stable foods is that fats and oils tend to become rancid, so they are inherently difficult to store for long periods without refrigeration. Butter, cream or sour cream all contain large amounts of fat in their normal state. Shelf-stable, unrefrigerated versions of these foods will most likely strive to preserve the aromatic molecules that provide most of the flavor, while limiting the actual fat content.
